Freeze Baby Carrots - Cut away the tops of the baby carrots with a sharp knife. Wash the vegetables, then peel the outer skin with a potato peeler.
Fill a large pot with water. Bring the water to the boil. Add the carrots to the boiling water. This is process is called blanching.

Blanch the carrots for 5 minutes. Fill a plastic tub or separate pot with ice water.
Drained the boiled carrots in a colander. Use caution as boiling water will burn your skin. Immediately immerse the boiled carrots in the ice water bath to stop them from cooking.
Allow the carrots to rest for 5 minutes then drain them over a colander. Shake them dry them pat them dry with paper towels.
Not all baby carrots are the same; one type is manufactured while the other is grown naturally. True baby carrots are immature vegetables harvested before they root. Manufactured baby carrots are cut down to their petite size by using special machinery. These small orange foods are root vegetables belonging to the Umbelliferae family.
