Place the pot on the stove and turn the burner on medium-low.
Allow the beans to simmer, covered, for two hours.
Turn off the burner and remove the beans from the stove. Most of the water is eliminated during cooking. If any water remains in the pot, drain the beans using a strainer and return them to the pot.
Baby lima beans, also called butter beans, are flat, oval-shaped beans with a light green exterior. The interior of the lima bean is white and develops a creamy texture when cooked. The baby lima bean is simply a smaller version of the traditional lima bean. Lima beans are a good source of vitamin B, protein and fiber. They are also extremely low in fat and calories, making them a healthy food choice. The traditional method for cooking baby lima beans is by boiling. Add this to my Recipe Box. - by eHow
